M.O. Pasta is the creation and culmination of Chef Mike's passion for Italian cuisine.
It all started when he was presented with the opportunity to travel to Italy while studying at the Culinary Institute of America. Immersing himself in the culture, he learned from Italian chefs, visited wineries and tasted the freshest ingredients.
After honing his skills in Chicago for 8 years at Michelin star restaurants and 5 star hotels, Chef Mike returned to his hometown to share his passion for Italian food with the Rochester community. M.O. Pasta was created to show that fine Italian cuisine can be enjoyed in the comfort of your own home.

Lauren's culinary journey traces back to her roots in Patterson, NY where her childhood love for Italian pastries and culture was ignited. Inspired by her family's culinary traditions, she embarked on a path that led her to become the talented Pastry Chef she is today.
A distinguished graduate of The Culinary Institute of America, Lauren refined her craft through rigorous training in classic baking and pastry techniques. Her career has been marked by diverse experiences, from spearheading restaurant openings and training bakery teams to contributing her expertise to local bakeshops near her hometown.
Enriched by a transformative trip to Italy, where she immersed herself in the country's culinary delights, Lauren relocated to Rochester to join the team at M.O. Pasta.
